Local recipe from Choestoe Baptist Cookbook

From The Choestoe Baptist Church Cookbook - a recipe by Carolyn Collins Kelly, and printed in remembrance of her.

Broccoli Cole Slaw

1 pre-packaged bag of brocco- slaw

1 package original ramen noodles (reserve seasoning packet)

1/4 to 1/2 cup slivered almonds

1/2 cup vegetable oil 1 Tbs. sugar 2 Tbs. rice vinegar

1 Tbs. soy sauce

Brown/toast noodles and almonds in skillet sprayed with Pam or any vegetable cooking spray. Mix together with the broccoli. Combine vinegar, sugar and soy sauce adding the seasoning packet from ramen noodles. The vinegar mixture can be made the night before.

Pour vinegar dressing over the noodle/broccoli mix in a large bowl and stir until it is thoroughly coated.

This side dish is a refreshing, crispy slaw/salad perfect for springtime.
