Cooking with Barbara

This is a recipe from a good friend and Aunt of my friend, Her name is Irene Bagby. She is in her mid-nineties and lives in a nursing home in Gwinnett County. She grew up in Buford, Georgia. She was always so much fun to go and visit. She moved to Toccoa in her 80s where she had relatives. We never knew if she was joking when she used some of these terms but we got many jolly good laughs. Whenever she would talk about some husband putting his wife on a pedestal she would say, " Oh! He puts her on a pistol." When she had a cold she would say " Oh! My Noe is stopped up!" We would say, " Irene, don't you mean your nose?". and she would reply , " No, only one side is stopped up, so it's my Noe!" We always took her out to eat and she had a great appetite even in her 80s. They never had children but she looked on her nieces and nephews as her "kids" and did lots for them. A great wonderful lady and one of my favorite people.
Cream Cheese Bars
1 Box butter yellow cake
mix
1 egg
1 stick of butter

Mix and press into a 13 X 9 inch pan which has been sprayed.

Mix 1- 8 ounce package cream cheese, softened and 3 eggs and 1 box of powdered sugar.

Pour over the top of the butter, spread evenly.

Bake at 350 degrees for 30 to 45 minutes. Cool and cut into squares.
