Brandy Snaps

I have several good friends in Yorkshire, England. Of all the places I've traveled in England, Yorkshire is the most beautiful . It is one of the most lovely and varied scenery in England and has some of the countries cities. York, being one city that is my favorite with its wonderful minster.

My friends live in a small village named Bell Busk. They used to run the Post Office and had a little store where they sold local raised produce and especially fresh caught trout. They also had a small bakery and Tea Room. These cookies were some of my favorites.
Brandy Snaps
1/4 cup butter or margarine
1/2 cup sugar
1 cup plain flour
1/2 teaspoon soda
1/4 teaspoon salt
2 tablespoon molasses
1 teaspoon brandy( optional)
1 teaspoon ginger
1/4 teaspoon lemon peel
grated

Melt butter, syrup and sugar over low heat.

Remove from heat and add other ingredients.

Mix well and drop by teaspoons on a greased sheet at least 2 inches apart. Bake at 350 degrees for 7 minutes, sprinkle with regular sugar.

They will be brittle and snap.

Another recipe we used to enjoy at a Bed & Breakfast in York. They were really tasty.
Cheese Muffins
1 1/2 Cups flour
4 teaspoons baking powder
1/2 cup grated cheese
1 egg
1/4 cup milk
1/4 teaspoon salt

Mix flour, salt, cheese and baking powder. Together beat the egg and add to the milk. Pour into dry ingredients. Knead lightly and roll out.

Cut into rounds or place tablespoons in a greased muffin tin.

If you use the round, place on a greased cookie sheet. Bake at 350 degrees until done, about 10 minutes.
