Inspirational book of good recipes

In looking through all my cookbooks, I came across one that was given to me for Christmas, 15 years ago. It was from the Austell Eastern Star. Each page had a wonderful quote or poem which was food for thought for all of us. These two are my favorites:

"Lord, thank you for giving me so much to thank you for that I don't have time to complain."

"Doing nothing is the most tiresome job in the world because you cannot stop and rest."

Here are two recipes from the great inspirational book of good recipes:
Swiss Green Beans
2 cans French green beans, drained
1/2 tsp. salt
3 tsp. butter

2 tsp. flour
2 tsp. milk
1/2 tsp. sugar
3 tsp. grated onion
1 cup sour cream
8 oz. grated swiss cheese
Bread crumbs

Melt butter, stir in flour. Add milk, salt, sugar, and onion. Add sour cream and blend. Mix into cheese and beans. Cover with bread crumbs and bake in a greased dish at 350º for 30 minutes.

This is a different recipe from the green beans we've made for the last few years.
Blueberry Delight
Crust:
1 stick butter, melted
1 cup chopped nuts

1 cup flour
Mix and mash
into the bottom of a
pie pan to make the
crust.
Bake at 350º for 20 minutes.
Filling:
8 oz. cream cheese, softened
1 cup sugar
8 oz. Cool Whip, thawed

Blend with mixer. Spoon on to pastry shell and spread a can of blueberry pie filling on top. You could also use cherry, strawberry or even apple.

I have to end this column with the quote - how true! "Any housewife no matter how large her family, can always get some time alone by doing the dishes!"
