Pie, anyone?

So many people today say they had rather eat pie than cake. It's easier to make and much more tasty. I think men like it better and are not reluctant to try making one. Here are two easy and delicious recipes.

Rancher's Buttermilk Pie

I believe this recipe was given to me by co-actor, Brian Barrentine, who said is was Henry Lanier's sister's recipe. I don't know who they are!
1/2 (15 oz. package) refrigerated pie
crusts or use a deep dish frozen pie crust
2 cups sugar
2 Tbs. cornmeal
5 large eggs, lightly beaten
2/3 cup buttermilk

1/2 cup crushed pineapple, drained
1/2 cup sweetened flaked coconut
1/4 cup butter, melted
2 tsp. grated lemon rind
2 tsp. fresh lemon juice
1 tsp. vanilla extract

Fit piecrust into a 9" pie plate according to package directions: fold edges under and crimp. Combine sugar and cornmeal in a large bowl. Stir in eggs and buttermilk until combined. Stir in pineapple and next 5 ingredients. Pour filling into piecrust. Bake at 350º for 45 minutes or until pie is set and top is lightly brown. Serve warm, at room temp or cover & chill till ready to serve.

French Coconut Pie


4 Tbs. (1/2
stick) butter, melted
2 eggs, beaten
1 Tbs. all-purpose flour
3/4 cup sugar
1 (3-1/2 oz.) can shredded sweetened
coconut (about 1 cup)
1 cup milk
1 (9-inch) unbaked pie shell

Preheat oven to 400º F. In a large bowl, combine melted butter, eggs, flour, sugar, coconut, and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes.
