Cooking with Barbara
Biscotti

I love this Italian cookie - I had quite a bit this time in Italy. You can dress it up at Christmas and make a holiday biscotti to dip in coffee.
Preheat oven to 350
2 cups plain flour
1 1/2 tsp. baking powder
3/4 cup sugar
1 stick butter (room temperature)
1tsp. grated lemon peel
1/4 tsp. salt

2 eggs
3/4 cup nuts (at Christmas,
use pistachios and cranberries)

Grease or line a large baking sheet with parchments paper (I often don't have parchment paper.)

Blend flour, baking powder and salt. With a mixer, or by hand beat sugar and lemon zest in a bowl. Add eggs one at a time - add flouring mixture - beat till blended. Stir in nuts.

Form dough into a wide log - bake until golden brown (about 30 minutes). Cool.

Place log on a cutting board; cut diagonally into 1/2 to 3/4 inch slices. arrange cut side down on a baking sheet. Bake 15 minutes. Dip in melted chocolate if desired. At Christmas, sprinkle with red or green colored sugar.
