GH COOKBOOK - Page 147

Prepare one of the glazes below and substitute for the pineapple glaze in Step 2 of Pineapple-Glazed Ham. During the last 30 minutes of roasting time, brush the glaze over the ham two or three times.

MELBA GLAZE

2/3 cup peach preserves

1/2 cup red raspberry jelly or jam

In small saucepan, heat peach preserves and raspberry jelly until melted and smooth. Makes about 1 cup.

TOMATO AND ONION GLAZE

1 tablespoon butter or margarine

2 tablespoons finely chopped onion

1 can (8 ounces) tomato sauce

2 tablespoons brown sugar

1 teaspoon Worcestershire sauce

In small saucepan, melt butter over medium heat. Add onion and cook until tender. Stir in tomato sauce, brown sugar and Worcestershire; heat to boiling. Reduce heat; simmer until glaze thickens, about 5 minutes. Makes about 1 cup.
